About Monica Velo

Monica began her journey in Pastry Arts by attending the Orlando Culinary Academy, Le Cordon Bleu Program in 2004. There she studied Cake Decorating, 

In Spring of 2015 she established Polka Dot It Cake Shop and Bakery LLC to focus on baking custom cakes for special events and themed parties.Artisan Breads, along with Pastries and Chocolate Candy Making. Shortly after graduation, Monica began working in the hospitality industry creating custom cakes and pastries for 5-star hotels such as the Ritz-Carlton hotel and JW Marriot in Orlando and Central Florida. She was most recently employed as a top Pastry Chef for Florida Hospital.

Monica enjoys the ability to be creative, (as her cakes definitely portray), taking a customer's concept and developing it to create beautiful handmade custom cakes, pastry or baked goods.
